Choose an Orange, Any Orange
The Sicilian Orange Salad. So simple. So nutritious. So good. The following two recipes are equally delicious.
Franco's Orange Salad (one serving)
1 orange (any type)
½ tbs extra virgin olive oil
salt
Wash the orange well. Do NOT peel. Cut the orange in half. Slice very thinly, about 1/8th of an inch. Arrange slices in a loose mound on a salad plate. Salt lightly. Drizzle with olive oil.
Here's the traditional recipe, from ItalianMade, the website of the Italian Trade Commission.
Insalata di arance (six to eight servings)
6 tarocchi (blood oranges)
3 tbs. extra virgin olive oil
1 onion
parsley
salt
pepper
Peel the oranges including the white membrane, and cut the fruit into thin slices. Slice the onion very finely into rings and place over the oranges. Sprinkle with chopped parsley. Dress with salt and pepper and olive oil, then let rest for 10 mins.
